Research line 1: Quality control and food safety

It aims to study the hygienic-sanitary, nutritional, sensorial and physical-chemical quality of raw materials and products in the Legal Amazon.

 

Research Line 2: Development of new food products

It aims to develop new products using raw materials and waste in the Amazon and new processing technologies.

 

Research line 3: Biotechnology applied to the food industry

It aims at the manipulation of organisms (microorganisms, vegetable or animal), as well as part of these or biological molecules in processes already existent to improve the quality of the final product and the production of biological molecules of alimentary degree.
