The Postgraduate Program in Food Science and Technology at UFT (PPGCTA-UFT) was conceived by professors from the UFT Food Engineering course with the contribution of professors from the Federal University of Viçosa due to the need to train the faculty of the Institution, to meet regional demands and training human resources as a strategic area for the development of Tocantins. The APCN of the course was submitted to CAPES in 2012, with the approval of the CNE / CES 313/2012 approval by the CTC-ES and the recognition of the course issued by Ordinance No. 11, of January 4, 2013, with the grade 3.

The entry of the first class occurs through a selection process carried out in May 2012, with the beginning of the academic semester in August of the same year. In the first four-year period of activity of the PPGCTA-UFT, the Program had two lines of research “Quality control and food safety” and “Development of new food products”, 12 permanent professors and 2 collaborating professors and 23 defended master's theses. The first evaluation of the course maintained grade 3, with the approval of opinion CNE / CES 487/2018 and publication of Ordinance No. 609, of March 14, 2019.

In 2017, the PPGCTA-UFT underwent structuring in its bylaws with the objective of increasing the quality of master's dissertations, being more specific in public notices to promote research and infrastructure, accreditation of new permanent documents and introducing the internationalization of the Program. As a result, the PPGCTA-UFT started to annually offer courses in foreign languages ​​by renowned international institutions and establish partnerships with national and international institutions. The Program expanded its lines of research with the creation of the “Biotechnology applied to the food industry” line. As a result, in 2018, the PPGCTA-UFT was included in Public Notice No. 21/2018 Procad-Amazônia, starting a partnership with the Federal University of Lavras and the Federal University of Roraima, in addition to national partner institutions. In 2020, the PPGCTA-UFT established a partnership with the institutions UnB, USP, Butantã, UFG, CETENE, UFF, Albert Einstein Hospital, where a project for the development of a methodology for the analysis of Sars-Cov-2 using nanoparticles was approved. of combined gold, coordinated by UnB. Also in 2020, the Program was included in the Notice no. 13/2020 PDPG-Amazônia Legal, starting a partnership with the PPGCTA of the Federal University of Pará. The number of scientific articles has increased considerably, as has the publication of books, collections, book chapters and patent filings.
